Hello again!
Today I'll be sharing a wonderful recipe I found on Pinterest. I tweaked it a little and it was a big hit so I thought I'd share it with you all. For those of you that know me well, you know that crockpot cooking saves my life most of the week. Let's face it, when you work full time and commute, the last thing you want to do is stand at a stove for hours preparing a meal. Crockpots are an awesome alternative. It takes a little planning but it is totally worth it!
On to the recipe...
Ingredients:
Frozen Chicken Breasts that come in a bag (use as many as you need for your family. I did a single layer in the bottom of my crockpot and we had leftovers)
1 bottle of Sweet n Spicy Sweet Baby Ray's BBQ Sauce.
1 can of drained pineapple chunks
Salt and pepper
Sriracha (if you like it spicy-I forgot to include it in the photo because I added it last minute)
Directions:
Spray your crock very well with Pam. I use the Olive Oil kind.
Place FROZEN chicken breasts in the bottom of the crock.
Season with salt and pepper.
Pour the entire bottle of BBQ sauce on top of the chicken.
Add you desired amount of Sriracha on top of the BBQ sauce.
Top with pineapple.
Cook on high for 2-3 hours.
Low for 5-6 hours.

I start mine on low in the morning before I leave for work and it's perfect when I get home.

You can serve over steamed rice or with veggies, like me. It makes a lot of juice that's yummy poured over the chicken.

P.s. If you're a wuss (just kidding) and don't like spicy food. Then do not use the sweet n spicy BBQ sauce. Use honey or original instead.
